McCoy has done national commercials for Radio Shack, AT&T, 7-Eleven, and Chevrolet. Her father Jaan McCoy has been a disc jockey for 35 years. Meredith is the oldest of six kids, she has two whole brothers, Andy Thompson and Paul Thompson, and three half siblings, Isaac Kalmes, Caroline Kalmes, and Elizabeth Kalmes. Meredith has been singing professionally since the age of seventeen. She has sung with the Cary Richards orchestra, traveled all over the U.S. with Vince Vance and the Valiants, and has performed with Ricky Derek's Night 'Oh' Cabaret. She is currently performing with CornerPocket, a local six-piece jazz/swing band based in Dallas, Texas, who will soon release their second album.

McCoy is known for her roles as Launch, Android 18, Marron, and several other characters in the Dragon Ball series. She did not reprise her role as Android 18 in Dragon Ball Z Kai and was replaced by fellow voice actress Colleen Clinkenbeard, but voiced the character again in the movie Battle of Gods and Resurrection 'F' as well as Dragon Ball Super.

Some of her other roles include Fujiko Mine in the Lupin III franchise, Kagura Sohma in Fruits Basket, and Maria Ross in the Fullmetal Alchemist franchise.
